A HOTEL is increasing spend and retaining staff with a wine school partnership.

Hotel du Vin, in Brighton, has teamed up with Sussex Wine School.

As a result the school uses the hotel’s meeting space for courses in return for credit to train catering staff.

Since then 21 staff have had various levels of training.

The additional expertise has increased average wine spend growing by nearly £3.50 per person in the last financial year June 2013/2014.

General manager Simon Maguire said: “We have offered it to staff from all different departments so that the whole hotel has wine at the centre of its ethos.

“Another great part of this is that since starting the training not one person has left except Charlotte Coleman who was promoted, so it has had a nice staff retention element.”

The hotel has also been approached now by the Wine Spirit and Education Trust which considers it to be a Pocket of Good Practice.
