A SAIL-powered, zero-carbon pirate-style ship could transport new world foods to supply a zero-waste Brighton restaurant.

Restaurant, bakery and coffee house Silo, which opened in Upper Gardner Street, Brighton, six weeks ago under a pre-industrial food system, is bidding to crowdfund £40,000 for the new venture.

Founder and chef Douglas McMaster is now crowdfunding to ship non-native ingredients such as coffee and cacao to the restaurant with a zero carbon footprint by social enterprise Fairtransport.

Mr McMaster, formerly of London restaurant St John and Noma and BBC Young Chef of the Year, said: “It’s financially sensible as well as enormously productive in moving towards ‘future proof food systems’.

“Other than pirate transport the money would go towards fine tuning our engine. We need a new dishwasher.”

Silo describes itself as a “hub of alternative innovation” and pledges to show simple, primitive solutions for small business to problems ignored by big corporates. It brews its own beer and cider in the basement and grows mushrooms from used coffee. All bread is baked on site with some heritage wheat varieties which were once presumed extinct.

Silo also uses pH neutral electrolysed water – a more powerful a disinfectant than soap or bleach. It is believed to be the first zero-waste food business in the country with most off-cuts composted.

Mr McMaster said: “We believe that the world is waking up to the reality of sustainable issues with waste leading the way as one of the biggest topics of recent years. We also believe that consumer trends mean that people are now more interested in how their food reaches their plates,.”

The business is co-owned by David Wickes, managing director of European Recruitment which had £7 million turnover in 2013 and has offices above Silo, and his partner Sarah Bennett.

Silo’s closing hours and alcohol licence are currently restricted due to the residential area.
