ONE of most anticipated restaurants of the year will open tomorrow.

Redroaster, in St James’s Street, Brighton, will welcome its first customer with a soft launch following a three-month refurbishment.

Michelin-starred chef Matt Gillan will take over the kitchen and will run a restaurant called Pike and Pine in the evening.

During the day it will remain as the Redroaster cafe with lunch and brunch dishes by Gillan.

As part of the soft launch there will be 50 per cent off the day menu tomorrow, Thursday and Friday.

Foodies will have to wait a little longer for Gillan’s fine dining experience in the evening, which is expected to be launched in a few weeks.

The daytime menu consists of lunch and brunch dishes and there will be a range of blended and single origin coffees as well as cocktails, local wines and beers to choose from.

Gillan told The Argus: “We’re really excited to be bringing Redroaster back to Kemp Town and look forward to seeing everyone there from tomorrow.”

Gillan was head chef of the Michelin-starred The Pass restaurant at The South Lodge Hotel near Horsham.

He has also made a number of TV appearances including making the final banquet on Great British Menu and Saturday Kitchen.

The ex-protégé of the likes of Gordon Ramsay, Daniel Clifford and John Campbell, he is considered to be one of the most talented young chefs in the country.

He said he hopes to bring a similar style of cuisine and quality to the coffee house.

The cafe-restaurant has been completely refurbished with a botanical theme.

Owners brought in World Designer of the Year Hana Hakim and architecture company Studio C102 for the project.

Work was still being carried out yesterday but owners said they were confident of being able to open on time tomorrow.

It will be open from 7am to 5pm and will offer breakfast, brunch and lunch.

Redroaster is the only certified organic coffee roastery south of London, having been launched 16 years ago.
