A GOURMET deli, wine shop and restaurant is aiming to bring some new quality to Hove.

Accomplished chefs Paul Morgan and Sam Pryor are behind Fourth & Church.

The neighbourhood shop and bar is modelled on the great tapas bars of Seville and delis of New York.

It will boast adventurous and familiar wines, artisan cheeses, cured meat and fish, gourmet pâtés and terrines, healthy salads, pickled vegetables and preserves.

There will be a particular emphasis on deeply-flavoured, cultured, preserved food paired with affordable wines.

The cooks have extensive experience across the world, from Michelin-starred formal restaurants, to busy gastro-pubs.

As well as experience in the kitchen, they have both waited tables, tended bars, sold wine and managed several different hospitality and retail ventures.

Paul, formerly head chef and general manager at Terre à Terre, said: “We want to provide a home for people like us, who love food and wine but who want to eat and drink in an unpretentious, friendly environment. We are passionate about sharing our love of exceptional food and wines.

“We will encourage our customers to taste and try wine that wouldn’t automatically be their first choice by offering wine at a small, fixed mark up in the restaurant and by making sure we have wine at affordable, supermarket prices in the shop.”

Sam, formerly of The Fat Duck, added: “When deciding to open in Hove we talked about our own great food experiences – places where we have worked and places we have visited around the world.

“Although some have included formal restaurants, our favourites turned out to be markets, tapas joints, diners and delis.

“We thought it would be fun to reproduce the atmospheres we had enjoyed in eateries such as La Brunilda tapas bar in Seville, with delicious plates in an unpretentious environment and the Russ & Daughters’ deli in New York, with its exceptional offering of preserved foods to take away with its exceptional offering of preserved foods to take away and a busy eat-in counter.”

The restaurant will be open all day and the wines will have a smaller price mark-up than those in pubs and restaurants.

Fourth & Church is working with independent merchant Henry Butler to source and import exciting wines.

It opens on Monday.
