Head chef of The Pass restaurant, at the South Lodge Hotel, near Horsham, Matt Gillan showed off his skills at the Brighton and Hove Food and Drink Festival’s Sussex and The World Weekend.
Ahead of his appearance on the BBC's Great British Menu, he cooked alongside 64 Degrees' Michael Bremner and Silo's Douglas McMaster.
There are around 50 stalls, free children’s food activities and a host of special events including the a BBQ cook off, a tea dance and a day-glow disco at Hove Lawns this Bank Holiday Weekend.
