STAR chef Michael Bremner is on course to cook in the House of Commons and win a prestigious television contest.

The head chef and owner of 64 Degrees in Brighton wowed the judges when he got ten out of ten across the board for his fish dish and come out top to represent his native Scotland on the BBC’s flagship cookery show Great British Menu.

Michael is still on a high at his popular restaurant in Meeting House Lane after impressing the likes of two Michelin starred chef Daniel Clifford and food critic Matthew Fort.

“It was amazing just winning the Scottish heats and getting to this level.

“I’ve never really done competitions before so when you get someone like Daniel Clifford saying it’s a great dish it was quite a moment.”

Michael has been at the helm of 64 Degrees since 2013 having previously worked in the old Due South in the King’s Road Arches and Food for Friends, in Prince Albert Street.

Before moving to the city he was at the celebrated Pittodrie House near Aberdeen.

Michael amazed the judges in the Scottish heat cured mackerel dish.

Set into half a wine bottle with a poem attached the dish featured five pieces of cured mackerel each with a different garnish.

With each piece of fish, the topping was more luxurious – starting with seaweed and finishing off with an oyster.

Daniel Clifford said the dish was "a real testament of the coming of age of British food".

In the national finals this week Michael has the chance to cook at a banquet held at the Palace of Westminster, in celebration of everyday great Britons honoured by the Queen.

But he is keeping tight lipped about the final result.

“It opens a few doors and it’s an exciting thing to be a part of and with the chefs in the final this week I definitely recommend watching it, it’s incredible,” he added.

“It was a massive honour representing Scotland and I’m passionate about representing Brighton.”

Michael’s success was celebrated by fellow chef Ben McKellar when they joined The Argus to help judge Young Chef of the Year at the Brighton and Hove Food and Drink Awards this week.

“Being recognised nationally is a real achievement,” Ben said.
