TWO brothers have gone the extra mile to make sure their fries are the best quality.

Dashal and Chan Beevers, of BeFries, in West Street, Brighton, have imported a fryer all the way from Belgium.

It is hoped the piece of kit will deliver the same quality as can regularly be found in the fries capital of the world.

Since opening in August, the takeaway has proved a hit/

Dash, 38, said: "The response so far has been amazing.

"We try to offer great food in comfortable surroundings with good music and pleasant customer service. So far, it's going down very well as we get a lot of repeat customers and have had amazing reviews.

"Someone we had in the other day said they were the best fries in the world, which was really humbling."

As well as the specially imported fryer, Dash said the key is in the specially-sourced potatoes, which were developed just for fries.

They are peeled, cut to exact size then fried twice.

They are then served up with a choice of more than a dozen sauces - with curried ketchup, sweet peanut satay sauce and dill and gherkin among the most popular.

Dash said: "We're trying to do things the right way.

"We've taken care with everything in the business to make it as good as we possibly can.

"We pay staff the living wage, we support local charities and we are building links with some of the amazing independent businesses and producers that make Brighton so special.

"It's a real privilege to be part of it."

The venture is very much a new one for the brothers.

Dash, who has lived in Brighton for 20 years, used to run an independent record label.

Keen for a new challenge, he dreamt up the idea of BeFries two years ago and persuaded Chan to leave his job as head pastry chef working in some of London's most prestigious restaurants in April.

Since then the pair spent four months finding the right location and refurbishing the premises near the Clock Tower.

With brother Joe and sister Ezda helping out too, it is very much a family affair.
