THE Grand Hotel in Eastbourne has appointed Stephanie Malvoisin as head chef of its Mirabelle Restaurant.

Stephanie joins the team at five-star coastal hotel The Grand after three years as head chef at Laura Ashley The Manor Elstree and seven years at The Goring.

She also brings international culinary experience having worked in hotel restaurants in France, Canada and the Caribbean.

As head chef of The Grand’s Mirabelle Restaurant, Stephanie will be responsible for producing creative menus for the 2 AA Rosette fine-dining restaurant.

She said: “The Mirabelle Restaurant has an excellent reputation and I am really looking forward to a new challenge.

“I’ll be bringing some classic French flair to the restaurant’s modern British menus and I also look forward to mentoring the young chefs and apprentice chefs in the team.”

On November 1 the Mirabelle Restaurant will be celebrating Autumn in Britain with a special four-course menu paired with English wines from Bolney Estate in Sussex, Chapel Down in Kent and Three Choirs in Gloucestershire.

The menu will feature classic autumnal flavours such as marinated venison with Twineham Grange cheese and truffle dressing, roast guinea fowl with spiced beetroot and a Madeira jus and blackberry parfait with honeycomb chestnuts and William pear sponge.

The Mirabelle Autumn in Britain dinner costs £70 per person.
