The Brighton light-middleweight outpointed the tall Latvian 78-75 over eight rounds at the East End venue.
Victory on the Frank Warren show took 28-year-old unbeaten Ellett's record to 17 wins.
Earlier on the show, Hove-based heavyweight Nick Webb made an explosive professional debut as he stopped Croatian Hrvoje Kisicek in 56 seconds in a fight scheduled for four rounds.
