THE winner of MasterChef The Professionals is helping to design the menu for the brasserie at Brighton’s i360 tower.

Steven Edwards, from Horsham, who won the title in 2013, will help design the signature dishes at the soon-to-be-opened eatery and will run special events.

The 400-cover beachside brasserie will focus on Sussex produce with all ingredients coming from within the 26-mile viewing radius of attraction.

Mr Edwards, who will be joined by friend and business partner Josh Stanzl, will work with chefs from caterers Centerplate in the run up to the attraction’s opening.

Mr Stanzl and Mr Edwards’ are co-founders of etch, which provides cooking master classes, demonstrations, consultancy work and pop up restaurants.

Mr Edwards said: “Josh and I are really looking forward to working with this amazing new venue.

“We are Sussex chefs through and through and have a fantastic larder to choose from.

“We will always use quality local ingredients to create unique simple dishes focusing on getting the most out of each ingredient we use.”

Building work on the i360 started last year with the attraction set to open next summer.

Two hundred people at a time will be able to visit the top of the 162 metre structure with views across Sussex.

The brasserie will be at ground level next to the i360's gift shop, exhibition and children's play zone. The catering? team will also look after the rooms available for private events such as weddings and corporate dining.

“Our goal is to create a destination brasserie, serving the best of Sussex and we are particularly thrilled to welcome Steven and his etch. co-founder Josh Stanzl on board, bringing with them AA and Michelin kitchen experience and adding a special local flavour to our offer.

“We will serve the superb ingredients that are reared, grown, caught and brewed within the 26-mile viewing radius that you can see from the i360.”
