TWO Sussex chefs have reached new heights - and not only because they have helped to shape the menu for the brasserie at the British Airways i360 tower in Brighton.

Former MasterChef The Professionals winner Steven Edwards and good friend Josh Stanzl came together to create catering business etch, and their business is going from strength to strength.

The duo, both from Sussex, met in the kitchens of South Lodge Hotel in Horsham and have since gone on to design the menu for the biggest tourist attraction coming to our county's coastline, team-up with the likes of Nyetimber vineyard and be shortlisted for a string of awards.

The pair's signature style now involves them getting up close and personal with the clientèle which they call 'interactive dining'. They prepare and serve the food in front of the guests explaining the history of the dish and where the ingredients have come from.

Over the past year they have hosted pop-up restaurants in varying locations, from coffee shops to palaces.

The 400-cover beachside brasserie at the i360, where the pair have designed the menu, will focus on Sussex produce with all ingredients coming from within the 26-mile viewing radius of attraction.

Longer-term the duo want to launch permanent venues of their own.
