Cooks who want to create the dishes lauded by TV chef Gordon Ramsay can now do so at home.

Charita Jones, aka Momma Cherri, launched her first cookbook, Soul in a Bowl, in her Little East Street restaurant.

The Brighton eaterie shot to fame in 2005 after foul-mouthed Ramsay saved it from the brink of closure on his show Kitchen Nightmares.

But when he returned last year he told Ms Jones she was letting her trademark southern American-style menu turn into fast food.

The charismatic owner took the criticism on board and the customers have continued to roll in to Momma Cherri's Soul Food Shack.

With its roots in African- American cuisine, soul food is hearty and spicy home cooking.

The book gives an insight into the origins of the cuisine and stresses the importance of fresh, affordable food cooked with passion.
