It was August last year that Michael Bremner, a winner of the Great British Menu on BBC2 and proud owner of the popular 64 Degrees in The Lanes, Brighton, opened Murmur close to the i360 and right on the beach.

So Taste visited to try out the food and experience the location again before speaking to Michael.

We discovered dishes like the lobster croquettes starter, with a chorizo and saffron mayonnaise, continue to make sure the city has upped its game.

The peanut butter parfait should come with a warning, as no other dessert will ever live up to it. It is rich and perfect in taste and texture. It must be tasted to be believed.

And Michael is happy about how the first year has gone.

“I can’t believe it’s been that long,” he told Taste.

“It’s absolutely flown by. We opened the week before Pride last year so it was a bit of a baptism of fire, but it’s been an amazing journey so far.”

Murmur was opened by Michael and his partner, Carla, who opened it off the back of 64 Degrees.

He added: “A few of the staff moved down from 64 Degrees to help us open, and like 64 Degrees we place a huge emphasis on the quality of the produce we use on our menu.

“That is where the comparisons end really – we wanted to create a different offering at Murmur.

“Whereas 64 Degrees can be a bit more out there and experimental, we wanted to provide an offering that fitted the bill of a family friendly, relaxed seafront atmosphere, but still more interesting than burgers and fish and chips.”

The bream fillet and roast cod on the adult menu and the cod on the children’s menu is testament to that.

At most fish and chip shops you don’t get charred cauliflower and brown shrimp butter with your cod.

Michael said: “Obviously we’re by the sea so it would be a mistake not to showcase the amazing seafood on offer – we work very closely with Brighton and Newhaven Fish Sales to get the best, freshest produce we can and will usually have a special fish of the day on, as well as oysters and other fish dishes.

“However, we aren’t exclusively a fish restaurant and look to source amazing quality meats.

“At the moment we’re working with a farm from near my hometown in Aberdeenshire where we get amazing Highland beef.

“We also have quality vegetarian and vegan offerings too.”

Children love the food at Murmur, and the kids’ cocktails are great.

“One of the main reasons for opening Murmur is that we have two little girls and aside from a lot of the chain restaurants there are not many places that are a good setting for kids,” Michael added.

“We wanted to create a restaurant that, in addition to providing a quality, fresh food offering, you can take your kids and get a good meal that you know is cooked fresh.”

Michael credits his team with helping him to come up with such jaw-dropping dishes.

He said: “I’m lucky to have a group of chefs who are extremely passionate about what they do.

“We will regularly sit down and discuss the menu and encourage the whole team to come up with ideas.

“It’s about creating something that tastes good at the end of the day, so I’ll always encourage them to try new things – sometimes a new combination that I will never even have thought of before will just blow your mind.

“When you dined with us it was our sous chef, Liam Brennan, running the kitchen.

“The energy and creativity he brings to the kitchen is fantastic as I’m sure you would have noticed when you met him.

“My head chef, Josh Kitson, has been with me for years – he was there from pretty much the beginning at 64 Degrees and is an absolute rock for me.

“Our front of house team are also fantastic, always so friendly and knowledgeable – a great management team in Erwan Mauro, general manager and Simeon Gunn, his assistant.”

Simeon gives great advice on the menu choices, particularly in choosing the right drinks for each dish.

Also, he is great at helping the children choose and there are great drawing kits to keep them happy and entertained.

This place has the best music as well, by the way.

While we were there they had The Clash, Jonathan Richman and The Specials playing.

Eating parfait while listening to Roadrunner and looking out at the West Pier. Excellent.
