A POPULAR food company is preparing to launch a new vegetarian cookbook.

Higgidy, famous in Sussex for its Higgidy pies, which are sold at Brighton and Hove Albion’s stadium, will release The Veggie Cookbook on August 22.

Higgidy says it want to inspire vegetarians, or even those who fancy giving the vegetarian lifestyle a go, to get cooking.

This will be the second Higgidy cookbook by the company’s founder Camilla Stephens.

The book features 120 recipes for “every occasion”.

They include everything from meat-free lasagne to sweet potato cottage pie as well as popular items Higgidy is well known for such as garden pea and potato quiche.

The company said: “Beyond mid-week meals, there’s also a whole section dedicated to veg feasts for those special occasions where veggies are encouraged to take centre stage – from a festive cranberry and porcini nut roast to a whole roasted cauliflower with crispy potatoes and greens.

“Mixing good ingredients, clever combos and careful cooking, Higgidy: The Veggie Cookbook shows you how to create exciting veg-packed, meat-free dishes that you’ll turn to time and again.
