A VEGAN sushi business is crowdfunding to open a pay-as-you-feel restaurant.

Happy Maki in Pool Valley, Brighton, has launched a campaign to raise £80,000 for a new 50-seater restaurant in the centre of the city, where all food will be “given as a gift”.

According to the restaurant’s crowdfunding page, the aim for the new restaurant concept where customers can pay what they are able to is to “do business in a kinder and more regenerative way”.

The campaign states: “By offering our sushi as a gift, and removing the

demand from the usual transaction process we want to treat our customers more kindly.

“We hope this will be felt, and that it will create a very special atmosphere in our restaurants.

“This also opens the door to a healthy vegan meal for anyone who wouldn’t usually be able to afford it.”
