A new bar inspired by American speakeasies has opened in the city.

The bar, in Church Road, Hove, can be found in the basement of etch. by Steven Edwards, a fine dining restaurant.

Steven Edwards won MasterChef: The Professionals back in 2013 and opened etch. last year.

In what was once a bank, etch. is said to be “modern” and “minimalistic”.

The restaurant was reopened following an extension last November and diners were able to enjoy pre- and post-dinner drinks in the bar.

But Steven also wanted to open a bar for those who were not dining at the restaurant.

The new bar is called Ink as a nod to the tattoo bar it replaced.

Bar manager Bethany Pogson and her team have created a new menu in honour of the opening.

It includes customer favourites like the ‘etchspresso’ Martini, which Bethany says “elevates a modern classic” by using butter almanac and walnut bitters.

The menu also includes a vodka-based Old Fashioned with a Horlicks infused cream.

Bethany said: “A unique range of non-alcoholic alternatives are also on offer.”

“With our extensive local inspired drinks list, Ink is the perfect spot for an intimate after-work drink, romantic date, birthday, intimate festive celebration or a late-night cocktail,” said Steven.

“It’s proving really popular with those who know etch already and they are bringing new people to try the etch experience which has to be a good thing.”

The restaurant upstairs serves five, seven or nine course menus a focus on local and ethically-sourced produce.

According to Steven, it has become famous for its marmite bread served with seaweed butter.

etch. was ranked 58th in this year’s National Restaurant Awards, which is the highest ranking of any restaurant in Sussex.

Ink is currently open on a temporary event notice and non-diners must book a table in advance in order to access the bar.

The bar is open from 6pm until 11pm on Wednesdays and Thursdays, and from midday until 11pm on Fridays and Saturdays.
