A new ramen concept will be unveiled in Brighton by a TV star and Japanese food expert next month.

Ivan Orkin will launch ramen experience Ivan Mazemen for the first time in the UK at Shelter Hall in Brighton on February 10 in partnership with Sessions, the food brand franchiser and food hall operator.

Running for a 12-week residency in the city, Orkin has curated a menu that showcases his signature dishes served in his internationally acclaimed ramen shops in Japan and New York, and featured in his starring role in the 2017 Netflix Chef’s Table series.

He is also launching a four-week residency at Neighbourhood in Islington on February 9.

The “ramen junkie” is widely recognised as the American authority on ramen and all things Japanese cookery.

He speaks fluent Japanese and initially fell in love with Japan and its cuisine after working in a sushi shop in his hometown when he was 15.

His restaurant chain, Ivan Ramen, became one of the top places to eat ramen in Tokyo.

More ramen shops in Japan followed, and in 2012 he returned to New York with plans to launch there.

He soon opened two new sites, Ivan Ramen Slurp Shop and his US flagship, Ivan Ramen, which still operates today, followed by his first cookbook in 2013.

Mazemen is a broth-less ramen which has been a staple on Ivan Ramen’s Tokyo and NYC menus.

The menu will include dishes such as triple chicken triple garlic mazemen (comprised of fresh garlic, roasted garlic, garlic oil, paitan broth, chicken), katsu curry mazemen (panko breaded chicken breast, Japanese curry, thick rye noodles, assorted fukujinzuki), cold sesame noodles (chilled Szechuan chicken, roasted peppers, preserved chilli, coriander).

“It’s been a dream of mine to launch in the UK for some time,” said Orkin.

“The ramen scene in London is particularly exciting, and I can’t wait to introduce my mazemen dishes to a new audience of slurpers. Partnering with Sessions for residencies at their venues is the perfect way to launch Ivan Mazemen in the UK.”
