A new restaurant merging Japanese food and culture with local produce has opened in Brighton.

FUMI, created by a team led by chef Fabio Lauro, brings together fresh ingredients for sushi, sashimi and tempura alongside speciality dishes.

The team, which includes decades of experience with Japanese and Korean food, brings a range of meals which aim to create a "traditional eating experience" to the city.

Chef Fabio said: “At FUMI we want to bring everything that is good about the beautiful countryside of Sussex together with hand-crafted Japanese food, including well-known small plates like sushi, sashimi and tempura combined with exotic, lesser-known chef’s speciality main dishes, changing daily and using superb seasonal produce.”

“But our main ingredient is sustainability and we have tried to build this into everything we do, from the décor to our ingredients sourcing and making all the food and drink we serve in-house, down to our sauces, pickles and wasabi.”

FUMI serves food throughout the day including a breakfast, lunch and dinner menu.

The restaurant also offers a menu inspired by Omakase, a Japanese culinary tradition which involves chefs creating a tailor-made menu for customers.

Dishes on the small plates menu include salmon tartare, Wagyu beef and a range of sushi.

Also involved in the team is chef Sun Byun, who has worked with Japanese food for 20 years, and Reuben Waller, who helped to create plant-based restaurant KUSAKI in Brighton four years ago.

KUSAKI, in Circus Parade, received much critical acclaim including being featured in the Michelin Guide in 2022.

The restaurant also includes a range of Japanese inspired décor including a wall mural showing ling necked cranes, with high ceilings and table-side lamps.

FUMI is now open in Circus Street in Brighton.
