A woman who made the leap from music to baking now runs her own successful business from home.

Ione Edwards-Bayne, who lives in West Hove, grew up in South London but moved to Marbella, Spain, for secondary school.

Now 33, Ione first came to Brighton to study vocals at the Brighton Institute of Modern Music (Bimm).

“I came to Brighton to study and haven’t left since,” Ione told The Argus.

She said: “After finishing my degree in music, I quickly discovered a music career wasn’t the life for me.

“I worked in a local deli to nurture my love of cooking and quickly discovered baking.”

Ione worked at Cloud 9, a cake shop in York Place, Brighton, where she honed her skills.

She said: “My core skills came from my head baker position and over the years I’ve refined my style through practice.”

The home baker said her favourite cakes to make are themed, number-shaped cakes.

“I also love the current vintage trend so I ice a lot of frilly cakes,” Ione said.

She has made hundreds of cakes since she started her business.

“The most popular cakes are definitely drip cakes. Vanilla and raspberry sponge with white chocolate buttercream is a firm favourite," she said.
