A couple have left their old jobs to set up a new smash burger venture… and the orders are rolling in.

Former plasterer Adam Medhurst, 31, and NHS worker Emilyn Rosa, 22, have long dreamed of setting up their own business together.

They said their old jobs meant they would be up at 5am and back late at night most days.

The couple, from Norfolk Terrace in Brighton, started at the Castle Snooker Club in Castle Street but have now upsized and have been trading out of Temple Bar’s kitchen in Western Road for the last two months.

Adam said he dreamt up the idea while trekking up to London and is relieved to have swapped the trowel for the spatula.

“I’d had enough of it really, I was a plasterer for seven years,” said Adam. “I was working up in London getting up at 5am and getting home at 9pm every night.

“We do seven days here which is a struggle sometimes but when we expand we will have staff and be able to take some time off.

“Our dream was to be where we are now. We started from home doing a burger night and our first customers were our parents.

“When I was working in London, I’d get a two hour lunch break so I was building the website, looking at wholesalers and organising things. I was building it up while working.”

Adam and Emilyn started their venture at Castle Snooker Club in January for a month.

They moved up to Temple Bar after finding out the kitchen was not used.

“I think the kitchen was out of action for about a year so we had to give it a proper scrub,” said Adam.

“It’s not massive but it’s workable. We did the Brighton Marathon, that was 180 orders.

“The last two months have just been going up and up, I think our name is getting out there. We had some food critics in on Wednesday who were happy.

“We want to stay here for a while, we want to have our own shop eventually. People are loving it here, a beer and burger goes hand in hand.”

A smash burger is a hamburger patty that is pressed thin on to a heated pan or griddle at the start of cooking.

Emilyn, who worked in admin in the NHS, said: “I moved from Brazil with my family, I never thought I’d come to England and have my own burger shop.

“Our first customer was our parents at home who loved it. We thought why not, let’s do it.

“We have customers coming back now. We know their specific orders.

“Sometimes we see how many orders we have done and look at each other in shock.”
