A champion butcher hopes his new sausage recipes will go with a bang.

Gary Knight will unveil his latest creations on Saturday, July 23 at a Family Fun Day at South Downs Heritage Centre in Brighton Road, Hassocks.

Mr Knight has been making traditional sausages for more than 30 years using locally sourced meat.

He has taken on the best butchers in the region and beaten them year after year, taking gold at the annual sausage making contest at the South of England Show. Last year he won gold in two of the three sausage classes and was pipped at the post to take silver in the third.

He said: “The most popular flavour is the good old Sussex.

It’s a Cumberland sausage mix with six herbs to provide lots of flavour.

“More and more people are trying new and exciting varieties such as my Ditchling Dragon, which has a bit of a kick about it, pork and apple, pork and stilton, or my special with beef, Guinness stout, wild mushroom and horseradish.”

Mr Knight will sell his sausages at the heritage centre every Sunday.
