A BUTCHER is preparing to take the wraps off a range of sausages inspired by the World Cup.

Award-wining butcher Gary Knight of the Ditchling Sausage Co has been working on the 32 different flavoured bangers – dedicated to each country taking part - since Christmas.

The soccer selection includes Swiss cheese with cranberries and sage, Australian herby kangaroo, Nigerian curried goat with spices and chilli.

Others include Algeria with mint and cucumber, Portuguese sausages with port wine, Ghana crayfish and pork, and Chilean llama with chipotle.

Gary, who lives in Burgess Hill, said: “It’s been a case of not only deciding which ingredients best reflect each country’s recipe but also a case of sourcing the ingredients.

“People have asked me what I’ve done for England. Simple. A traditional sausage with six herbs - a winner and simply the best.”

Gary can be found outside South Downs Nurseries, Brighton Road, Hassocks, every Saturday and Sunday and will be decorating his stall with flags of all the nations taking part.
