BAKE Off star and semi-finalist Jurgen Krauss will be passing on some of his baking tips in a bread-making class.

Jurgen, who lives in Brighton, will impart his knowledge of a traditional German sourdough method of making bread in a four-hour baking class at the Open Bakery in St George’s Road in Kemp Town.

On Twitter, Jurgen said: “I am so excited to be teaching just around the corner.”

The method, known as the Detmold Einstufenfuhrung method, is one of Jurgen’s favourites and allows bakers to experiment with the science of sourdough baking.

People in the class will learn to alter the balance of dough hydration and ingredient ratios using a combination of light-rye, wholemeal and wheat flours, and a ripe rye sourdough starter.

Those attending the session will make and take home two loaves made from two different sourdough preparations, as well as a sourdough preparation for another bake.

During an interview on The Argus Podcast, Jurgen said he admires Brighton and Hove’s “continental” approach to food.

“If there is a place to get good food in England, it’s probably Borough Market and Brighton,” he said.

“There is such huge variety available. It’s a fantastic place to be.

“There is a lot of decent bread around in Brighton, really a lot.”
